CC -!- The enzyme, characterized from the lactic acid bacterium CC Limosilactobacillus reuteri strain 121, catalyzes the hydrolysis of CC sucrose and the transfer of the D-glucose moiety to suitable CC acceptors (inclduing sucrose), forming the glucan reuteran, which is CC typical for these strains. CC -!- The enzyme forms mostly alpha(1->4) glucosidic linkages, but also CC alpha(1->6) linkages. CC -!- The presence of maltose significantly accelerate the initial rate of CC the reaction.
