- The enzyme specifically hydrolyzes glucose from alpha-D-glucosyl-
(1->2)-beta-D-galactosyl disaccharide units that are linked to
hydroxylysine residues of collagen and collagen-like proteins.
- Acetylation of the epsilon-amino group of the glycosylated
hydroxylysine abolishes activity.
